Lyptus is a RED wood. Very red. It's confusing why you would pay the substantial upcharge for it, when you don't want reddish tones. You could have gotten a dark black stain on a much cheaper wood, like oak.

To get the cabinet maker to do anything, you'd have to prove that the sample is substantially different than what you received, not just a normal tonal variation. Even then, he might not, as it would mean remaking all of the doors and drawers at his expense. He might walk away instead. If you are able to get him to do that, pick a different wood without red tones in it. And have a complete sample door constructed, with the finish clearcoat on it as well as the stain.
