Should I or shouldn't I tear down that wall?

Now into our 4th week of getting bids on kitchen cabinets/countertops, and hearing differing opinions, I'm overwhelmed!

The prices coming in are more than I had expected, so I am now considering making some changes to the interior walls and opening up the space if we're going to spend the $$..

We have vaulted ceilings in the LR, Kitchen, and DR. There is a load bearing "partial wall" between the Kitchen and LR, but we can tear down most of it, leaving the load bearing support currently there.

The questions is: have any of you removed a wall such as this and opened UP all of the space to flow and view? In that space have you moved one area to another, hence moving the DR to the Kitchen area? Are you pleased with it now that you have completed the remodel?
