Wall around chimney - need your ideas & advice

We are doing a complete kitchen remodel, with the demo taking place next week. The wall with my cooktop and wall ovens is very tight for space, and a few inches extra would make a big difference in my cabinet layout. At the end of that wall is the wall surrounding our masonry chimney. We poked a hole in the wall, and there is about 5" from chimney to drywall. We only use the chimney for venting the hot water heater, but my husband does not want to remove the chimney. Can we remove the wall, and glue the new drywall tight to the chimney? Someone suggested we could use metal studs and still be in compliance with building codes. I'd love to gain whatever room I can on that wall - what do you suggest?
