The top will warp like crazy as soon as it senses moisture.

Check out John Boos stuff. That is what you want. My hardwood supplier sells generic 2" thick solid Maple countertops for $15 per square foot.

If IKEA is the only thing that matches your price point, find another material than wood for the countertops. You would be happier with a sheet of A/C plywood for a countertop.
