RECIPE: 4 ingredient yam/sweet potato

Posted by iris_gal (My Page) on

This is my current favorite way to eat yams/sweet potatoes.

yams, peeled
maple syrup
toasted pecans
Trader Joes cheese log (cream cheese one rolled in dried cranberries)

Slice yams about 3/4" thick & lay on rimmed baking pan.
Roast at 350 F. about 30 min (until just done).
Lightly drizzle with syrup; sprinkled with nuts; top with a thin slice (about 1/4" thick) of cheese log.
Return to oven for about 5 min. to soften/heat cheese (not melt). Serve.

a tsp. of Boursin or Aloutte cheese may be used instead.

Oops, my oven cooks hot so yours will probably need more time. Sorry.
