RECIPE: Other Uses for Eye Round

Hello folks,

I am stuck with a defrosted beef eye round (about 2.5lbs). I was going to roast it, but now our guests can't make it.

Is there anything else to be done with this cut but roast it on the rare side?

Pot roast it....but don't over cook it....cut it up and make stew, make Italian beef for sandwiches....or just cook it rare and enjoy and have some wonderful leftovers. I love cold roast beef sandwiches!

Thanks so much, lindaC, for your suggestions. I too love a good cold roast beef sandwich, with horseradish sauce. How can I be getting hungry now when we just finished dinner?

Use it for swiss steak, that's what we've done for years.

Gee, I'd forgotten about Swiss Steak. My DH was raised in Europe, and does not relate to the rare roast beef sandwich thing. Thanks for the good ideas!
