RE: LOOKING for: Cheese ball(log) recipes

Most cheese balls can't be frozen with good results. They get sort of grainy.

Cheese balls are easy....start with cream cheese brought to room temp, beat with a mixer and add stuff.
One of my favorites starts with 8 oz cream cheese
Then add 3/4 of a cup of sharp chedder grated finely
2 T mayonaise or sour cream
2 T sherry wine
1 tsp w'shire sauce...
Chill the mix and form into a ball or log and roll into chopped pecans.
The possibilities are endless after you sorten that 8 oz brick of cream cheese.....you can put in shredded Swiss cheese, and a couple of tablespoons of finely chopped watermelon pickles and roll in chopped almonds.
Or add 4 oz of blue cheese and 2 T sour cream and roll in chopped parsley.
Or cream cheese with very well drained crushed pineapple, and roll in either toasted coconut or chopped macadamia nuts.
Or cream cheese, 2 T sour cream,2 tsps of dried onion, and some well drained chopped red pepper and green chilis.....very Christmassy!

Ive made this one for years. My family always requests it.

Chili Cheese Log

1 lb velveeta cheese
2 large pkg cream cheese
2 cup package sharp shredded cheese
1/2 tsp garlic powder
2 T. lemon juice
4 T. worchestshire sauce
1/2 cup ground pecans
Chili powder

Soften velveeta cheese and cream cheese and mix together well. Add garlic powder, lemon juice, and worchestshire sauce. Blend well. Stir in shredded cheese and pecans.

Make into log shape on waxed paper. Then coat with chili powder. Best if refrigerated at least overnight so flavors blend. They are kinda ugly, but taste very good.

HAM CHEESE BALL
Two 8 oz pkg cream cheese, softened
1 cup ground smoked ham
1 TBL grated onion

All these cheese ball/log recipes and Ashley's is still the favorite with our family. She is always asked to make one for family gatherings

Cheese Ball

2 8 oz. pkg cream cheese, at room temperature
1 package of thin sliced beef (we use Buddig)
1 bunch green onions
1 cup shredded cheddar cheese or mixed cheddar/jack

Dice the beef finely and trim onions, leaving some green tops and chop finely. Mix all ingredients (she uses her hands because she's been making this since she was small, but a spoon works too), shape into a ball. Roll in pecans or chopped parsley if you like. Serve with crackers.

Plain and Popular recipe

CHEESE BALL

1 8-oz cream cheese
1 pkg ranch dressing mix

Put cheese in a bowl and let it get real soft. After it becomes soft add the dressing mix and mix all together. After mixing together form in round ball and then roll in either nuts or parsley flakes or whatever you want.
