I am looking for recipes using salsify. My MIL used to grow it serve it in some kind of a cream sauce. This year I want to try and grow it, I just need recipes for using it. I am looking for other ways to cook it than with a cream sauce. Thanks. Marg
I used to peel & slice lengthwise, dip in flour and saute in butter. The roots in my garden are quite small so it was a tedious process. As I remember it discolors quickly once cut.
