| I think what I really need is a good chocolate glaze, but I'm wondering if there might be a chocolate ganache out there that sets. I have a request for cupcakes that are going to be schlepped.
I'm trying to replicate the Boston Cream Cupcake, and I know that where they are going there will be no refrigerator space; hence the need for the non-dairy pastry cream as well. I looked at Alton Brown's Chocolate Glaze for Doughnuts but since I haven't tried it maybe someone else might have a better suggestion? |

| I don't know if this will help you or not, but my daughter, who is a wilton method instructor, takes canned frosting, melts it in the microwave and pours it on the cake. |
