recipe: need an easy italian dish to make to take.........

I have to make an ITALIAN dinner dish.......not lasanga or spagetti(someone is already bringing one of each of those) to my son's school for his debate judges.

They want a variety......but my mind is blank other than those two.

It needs to be easy like a casserole and something that would appeal to most adults.

ANY suggestions would be appreciated.....Julie

    This is a great one!
    INGREDIENTS
    1 (18 ounce) package frozen or fresh gnocchi
    1 pound bulk Italian sausage
    1 (14 ounce) jar spaghetti sauce
    1 1/2 cups shredded mozzarella cheese

    DIRECTIONS
    Preheat the oven to 350 degrees F (175 degrees C).
    Bring a large pot of lightly salted water to a boil. Add gnocchi, and cook until tender, 5 to 8 minutes.
    Meanwhile, crumble the sausage into a skillet over medium-high heat. Cook and stir until evenly browned. Drain grease, and stir in the spaghetti sauce. Remove from heat, and carefully mix in the cooked gnocchi and half of the mozzarella cheese. Transfer to a casserole dish. Sprinkle the remaining cheese on top.
    Bake for 15 to 20 minutes in the preheated oven, until the cheese is melted and the sauce is bubbly.

    What about a large antipasta plate? It can be as simple or as elaborate as you want to make it. Different salami, olives, roasted red peppers, cheese, melon wrapped in proscuitto,focaccia,

    , etc.

    Or maybe a big platter of Italian sausage and roasted peppers.

    Roasted Peppers And Italian Sausage Antipasti
    =============================================
    Red pepper
    Green peppers
    yellow peppers

    4 Italian Sausage (hot or sweet)

    Kalamata olives

    Olive oil

    Garlic

    Hot red pepper flakes (Optional)

    Regianno Parmesan Cheese

    Good Italian Bread or pita bread cut into wedges.

    .
    Roast peppers, peel and cut into 1/2 inch to 1 inch strips.

    Grill Italian sausages

    Mix olive oil with finely minced garlic (add red pepper flakes if using)

    Place roasted peppers strips decoratively on a nice platter.

    Slice sausages on the diagonal and place between the pepper strips.

    Decorate with olives.

    Drizzle olive oil and garlic over everything and shave some parmesan
    cheese over top.

    Serve as an appetizer with bread and a good Italian Red Wine.

    Or how about a giant sub? Huge loaf of Italian bread, piled with salami, mortadella, provolone, proscutto sliced onions, shredded lettuce, sliced tomatoes, some dry oregano...drizzled well with olive oil and wrapped and allowed to sit for sevral hours...
    Maybe you better make 2!!

    I saw Giada make a wonderful green bean dish last night on the Food Network. What's not to like about this?
