One lobster tail per person and you have leftovers???? You are serving it to the wrong people!....give them a couple of shrimp and save the lobster for me!
I have been served sauteed lobster medallions but they were never breaded, just gently sauteed and dressed with a little brandy butter sauce.

LOL. I failed to explain that this is for Christmas Eve where there is so much other seafood there's always leftovers. My cats are counting the days.

LOL! I certainly know what your speaking of, as I don't like to have many leftovers of Christmas Eve fish either. I don't have a cat sitting in the wings!

I would simply use bread-crumbs or panko bread-crumbs as you would bread any other fish, & fry them up in a combination of butter & EVVO.
