| I would like to adapt my Mom's recipe for flan to my Gagganau stem oven. Has anyone made flan in a steam oven? She makes it in a double boiler, not individual ramekins. For thanksgiving, I would like to make pumpkin flan. My main concern is not the ingredients but the cooking temp, steam level and time. |

| I make my flan in a bain marie in a regular old electric oven. Don't have a clue about a steam oven. Linda C |
