 o
recipe: looking for homemade v8 recipe...

I love V8 juice, it just tastes great, but paying for it doesn't make a lot of sense, since I grow the majority (7 out f 8 ingredients) in my garden every year. But, while the ingredient list on the label has all the ingredients, it obviously doesn't mention the exact proportions.

I did a search online, but none of the recipes I found had all 8 ingredients. Go figure.

Any help would be appreciated. Secondly, if you have a canning recipe, that would be great too! I don't have a pressure canner, but if the recipe has high enough acidity, I can use my water bath canner, handed down from my grandmother.

Try this one... I think it's close but I'm not sure if there is any garlic in V-8.

8 carrots, cut into chunks
4 stalks of celery, cut into chunks
6 tomatoes, cut into chunks
1 bunch of fresh spinach
1 handful of parsley
1 handful of watercress
1/2 medium white onion
1 small fresh beet, cut into chunks
2 cloves fresh garlic

Using a juicer or high power blender, add all of the ingredients and blend well. Stir, chill, and serve.
