RECIPE: Light Fruit Cake

I am gettig my christmas cakes baked and thought I would share this recipe. This cake is excellent. It calls for 2 (9 x 5 x 3deep) pans but I use my wilton

long loaf pan (16 x 4 x 4) Its perfect for this cake.

Make sure you use a big mixing bowl as it's a big batter when everything is put together

Holiday Light Fruit Cake

1 cup butter

1 8oz. package of cream cheese at room temperature

5 eggs

1 3/4 cup white sugar

2 tsp. vanilla

2 cups all purpose flour

2 tsp. baking powder

1/2 tsp. salt

2 cups golden raisins

2 cups mixed fruit

4 pineapple rings (2 red, 2 green; chopped)

1 cup chopped walnuts

8 oz chopped red cherries

8 oz chopped green cherries

1/2 cup flour

Method:

Cream butter and cream cheese, add sugar and eggs beating after each addition. Add vanilla and mix well. Sift flour, baking powder and salt and blend well. Combine fruit and nuts and toss together with 1/2 cup of flour. Make sure the fruit is coated well and broken apart. Stir into batter.

Pour into loaf pans that have been greased and lined with wax paper and floured. Bake at 300 F oven for 1 1/2 hours or until toothpick in center comes out clean. Cool in pan for 10 minutes turn out on wire rack to cool completely.

I wrap this cake with plastic wrap and foil and keep in the fridge. Make sure its kept air tight so wont dry out.
