RECIPE: Pasta with Shrimp and Goat Cheese

This was very good. I used a recipe I saw on the web (I can't recall 'where' I saw it!) for my inspiration. It fit nicely into Weight Watchers, which I have been following for a few weeks.


1 Tablespoon Oil
2 garlic cloves, chopped
1 shallot, chopped fine
1/4 teaspoon red pepper flakes

18 jumbo shrimp, cleaned and slit down the middle making two pieces

3 cups crushed tomatoes
Fresh basil leaves (10 or so)
2 oz. goat cheese

While cooking pasta...
Heat oil and saute garlic, shallots, and red-pepper flakes for several minutes.
Add Shrimp and saute for 4-5 minutes.
Add tomatoes and basil, stir.
Let shrimp cook in tomato mixture for 3-4 minutes, or until cooked through.
Drain pasta (reserving some pasta water)
Right before adding drained pasta, add goat cheese and stir.
Add some pasta water if too thick.
Enjoy.
