RECIPE: Loaded Broccoli soup

Here is a recipe that me and my Fiance just love on a cold night. It is open for interpretation, and very easy to make in a slow cooker. I have already posted this recipe online before, so here is the link:

Ummm it's not just a link to "Ads" It's a link to my recipe. If you took the time to look it's a link to my blog page that I post all of my recipes on. If the page contains "ad's" it's only to support the price of running the blog every month. The recipe is 100% free and viewable without you ever having to click or hardly even "see" an ad.

So saying don't bother seems rather misleading and rude. It's a link directly to my recipe, which is my own personal recipe. It's not some kind of scam sending you to a site of Ad's. Be a little more straight forward with your posts please.

I wouldn't want someone to miss out on such a delicious recipe because you posted "Ad's Don't Bother" like the recipe isn't there or doesn't exist. No one is obligated to do anything but view the recipe, cook it, and eat it. Oh yeah you can come back and thank me afterwards if you like. It's delicious ;-)

That had ads too, I cut mine in half, so just double it for the original.

Loaded Broccoli Soup Serves 3-4

This is a very healthy recipe with many ways to cut more fat out of the soup. (See tips at bottom) The recipe started as a simple broccoli cheddar soup, but over the years it has evolved into more of a meal than just a side of soup. I hope this recipe will fill your family up and keep
them warm on cool evenings.

Ingredients:

3 cups broccoli florets

1 cups cooked, cubed chicken

2 small potatoes cubed, uncooked

1/4 lb Velveeta cheese

1/2 small container heavy whipping cream (or fat free milk)

1 cups chicken broth

1 1/2 tablespoons butter

Salt and pepper to taste

Cut up the broccoli to desired size, (I prefer larger pieces) and place them in a pot of salted boiling water. Leave uncovered and cook for 5-7 minutes, until broccoli has a bright green color to it. Remove from heat and strain.

Transfer the strained broccoli into a crock pot, add chicken broth, and cooked chicken. I usually cube the potatoes and microwave them for about two minutes, this is only if I am pressed for time, but if you have the time, just put the potatoes in the crock pot when the chicken goes in. Stir ingredients slowly, cook on low for 1 hour. After the first hour has passed, cube the Velveeta and put 1/3 of the cubes into the crock pot, add half the container of whipping cream, and all three tablespoons of butter. Let stand on low for another hour. After the second hour has passed, stir gently and add another 1/3 of the Velveeta cubes, and the last of the whipping cream. Let it continue to cook on low for another hour. After the last hour add salt and pepper to taste and the last of the Velveeta cubes. Cook for ½ hour on low. Dinner is served.

Loaded broccoli soup.
2 T butter
1/4 cup chopped onion
1/4 cup sliced celery
Slowly sautee the onion and celery in the butter until soft....do not allow to brown.
Add 1 qt chicken broth ( one of those boxes if you don't make your own)
And simmer slowly uncovered with 2 raw skinless boneless chicken breast halves, for 30 minutes
Remove chicken from soup and cut up.
Add a 24 oz package of frozen broccoli florettes to the soup....and return to a boil.
Stir 1/4 cup flour into 2 cups of skim milk until smooth, slowly pour the flour and milk mix into the simmering soup....stirring to prevent lumps. Cook at a simmer for 3 minutes.
Add 5 oz of sharp cheddar cheese shredded, cook slowly until cheese has melted.
Add chicken back to soup and correct seasonings...I like to add a generous pinch of cayenne pepper.
Serve....bacon crumbles are a wonderful topping.
