LOOKING for: gumbo

Trying to make regional American recipes for my brother in law, visiting from outside the country. Found out he loves okra! The recipe I have used before is from the back of the Pictsweet Frozen Gumbo Veg bag! Thought maybe I could make it more authentically. Either shrimp or chicken versions would be fine.

CHICKEN GUMBO
One 3 1/2-4 lb chicken
1 cup celery stems & leaves, chopped
Salt to taste
3 medium potatoes, diced
2 large onions, chopped
2 cups okra, diced
1 cup carrots, diced
2 cups tomatoes
10 oz pkg frozen baby green butter beans
2 cups tomato juice
1/4 tsp pepper
1 TBL Worcestershire sauce
2 ears fresh corn, scraped or an 8 1/2 oz can cream-style corn

Place chicken in large saucepan & fill with water until the chicken is 1/2 covered. Add celery & salt. Cook until chicken is tender. Place reamining vegetables except corn in large saucepan; add tomato juice & enough water to cover. Cook over low heat. When chicken is done, remove & cut into bite-sized pieces. Add chicken, broth, seasonings & corn to vegetables & continue to simmer; stir occasionally to prevent sticking.~~When Dinnerbells Ring

I can vouch for Karen's (Riverrat) Gumbo as I have been privileged to have it. As you can see from the comments okra is a variable as is file...all depends on what you like.
