RECIPE: Cranberry White Chocolate Oatmeal Cookies

I posted this on the dessert exchange as well.

My daughter called from college this week and said she had the best cookie she's ever had - Cranbery White Chocolate and oatmeal. She said I just had to find a recipe. I tried the one on the Craisins bag and they were very average. Then I tried this recipe ad OMG, they're Yummy.

I recommend this recipe which I found on another forum.

I copied this off the bb here last week & made them over the weekend - they are FABULOUS! The dough was so yummy, I could hardly stay out of it & the baked cookies were just as good! A keeper for sure! Thanks jdawn!

These are really tasty and the dried cranberries gives it a Christmas like cookie.

WHITE CHOCOLATE CRANBERRY OATMEAL COOKIES

1 cup butter, at room temperature (2 sticks; use butter only)
1 cup firmly packed brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 1/2 cups old-fashioned oatmeal, uncooked

1 pound white baking chips or chopped white chocolate (2 2/3 cups)
2 1/4 cups Craisins (see editor's tip)

Preheat oven to 350 degrees.

Cream butter with sugars. Add eggs and vanilla and beat well. In a separate bowl, combine flour, baking powder, salt, baking soda and oatmeal. Add to butter mixture and mix well. Stir in white chocolate and dried cranberries.

Place spoonfuls of dough on ungreased cookie sheet and bake for 12 to 13 minutes, or until very lightly browned.

These cookies have a high ratio of baking chips and cranberries to dough. If you prefer a less sweet cookie, reduce the amount of baking chips

That recipe is very similar to my favourite Oatmeal Cookie. About the only difference is the addition of an extra egg and it doesn't contain cinnamon or nutmeg.

Like Woodie I'm not a fan of raisins but I don't mind cranberries. I add Callebaut White Chocolate cut into chunks.

Also try them with a sprinkle of sea salt.

Oatmeal - Best Oatmeal Cookies

1 Cup butter
1 cup sugar
1/2 cup
packed brown sugar
1 egg
2 teaspoons vanilla
1 2/3 cup flour
3/4 Teaspoon baking soda
1/8 teaspoon
baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
dash nutmeg
1 1/2 cups rolled oats

Preheat oven to 350 Cream butter and sugars together until light and
fluffy. Add egg and beat until smooth. Add vanilla Combined flour,
soda, baking powder, salt, cinnamon and nutmeg. Stir into butter
mixture. Add rolled oats. Roll into small balls (golf ball size) and
flatten with glass dipped in sugar. Bake 10 to 12 minutes or until
bottoms are golden. Cookie should not get brown. Cool on wire rack.
