RECIPE: One Egg Cake

I had one egg left and decided to use it and looked up a recipe that only required one egg. The recipe said I could put the batter in a 9" round or square pan. Next time I'll use the square pan as its sides are higher (the cake kept rising and I had to cook it an extra 7 minutes :) It was pretty good with a buttercream frosting drizzled over it. ann

One Egg Cake

2 cups flour
1-1/4 cups sugar
2-1/2 tsps baking powder
1 tsp salt
1/2 cup butter, softened (1 stick) I used unsalted
1 cup milk
1 tsp. vanilla
1 egg

Sift together the first 4 ingredients. Add rest of ingredients and beat 2 minutes. Pour batter into a 9" square pan. Bake at 350 degrees for 30 minutes or until cake tests done.

Frost with favorite icing.

I LOVE vanilla and a yellow or white cake. Never understand why so many people want chocolate. This is a handy recipe to keep, thanks, Ann!

Thanks, Woodie. I was glad to find (and try out) this recipe because you never know when you might want to make a cake only to discover you have just 1 egg in the fridge. I think next time I'll frost it with whipped cream and fresh fruit.

My mom could whip up a simple cake at a moments notice. If she had apples, she'd throw them in. I wonder if this is that type of cake. Didn't matter when you stopped at my mothers house, there was always a pot of coffee and a piece of cake.

Never learned how she did it. I'll give this one a try.

I made this cake late today and, sorry to say, am not impressed.

The cake is very heavy and dense and needs flavoring added to it. It's far more like a heavy coffee cake than a cake.

I used the 9 inch square pan and found the same problem that Ann had with the round pan. Cake came high up the sides and took about an extra 10-15 minutes to bake in the center.

The other difference was I peeled, cored and thinly sliced an apple after quartering it. I placed them on the top of the cake and sprinkled with cinnamon and allspice.

Hubby didn't think it was too bad (remember he's male, eats anything and never complains about how bad something tastes, even if it is really horrible.)

But he suggested I try making it more as a coffee cake, put some "coffee cake topping stuff in the middle of the cake and on the top, then add the apples on top of the coffee cake mix stuff."

So much for his wording, but I think he has a really good idea. I'm going to try it that way sometime in the next week and see how that turns out.
