| This is very good. The whole family requested it again. Linguine in Saffron-Lemon Sauce with vodka. 1 lb. linguine 1/2 c. whipping cream 1/4 c. vodlka or chicken broth 2 tbsp. unsalted butter, cut up 1/4 tsp. ground nutmeg 1 1/2 tsp. grated lemon peel 1/4 tsp. saffron threads, crushed 1/4 tsp. salt 3 oz. sliced prosciutto, cut into strips 3 tbsp. fresh lemon juice 1. Cook linguine in large pot of boiling salted water 8-10 minutes or until al dente: drain 2. Meanwhile, place cream, vodka, butter, lemon peel, nutmeg, saffron and salt in a large skillet. Cook over low heat 5 to 8 minutes or until hot and flavors have blended. 3. As soon as linguine is drained, add to skillet with prosciutto; increase heat to med-high. Bring to a boil, gently stirring to combine. Remove from heat. Add lemon juice; toss. Hope you like this as much as we do. |
