LOOKING for: how to use peaches

somebody just gave 60 huge beautiful peaches BUT I think they were picked green and have been held in storage. Some of them are kinda spongy, not really overripe-type-soft, and when you cut into them, they have small dots of the peach that has sorta ripened at a different rate. They aren't real sweet, but there is a bit of sweetness; they surely aren't tart like they'd be if underripe.

Now, what should I to do with them? Should I make them into jam? Peel them in boiling water, if possible, cut and freeze? I think I'll try a small pie...to test the taste.

Oh, what a waste for something so beautiful!
