RECIPE: Green Tomato Cake

4 cups chopped green tomatoes
(or whiz in blender without the salt & drain; yields about 2 1/2 cups)
1 T. salt
1/2 cup butter (used 1/4 c. butter plus 1/4 c. applesauce)
2 cups white sugar
2 eggs
2 cups all-purpose flour
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. baking soda
1/4 tsp. salt
1/2 cup raisins (used craisins)
1/2 cup chopped walnuts

Place chopped tomatoes in a bowl and sprinkle with 1 T. salt. Let stand 10 min.
Place in a colander, rinse with cold water and drain.
Preheat oven to 350 F. Grease and flour 9x13 inch baking pan.
Cream butter and sugar; beat in eggs until creamy.
Sift together flour, cinnamon, nutmeg, soda and 1/4 tsp. salt.
Add raisins and nuts to dry mixture; add dry ingred. to creamed mixture.
Dough will be very stiff. Mix well.
Add drained tomatoes and mix well. Pour into prepared pan.
Bake 40 - 45 min. in preheated oven, or until toothpick inserted into cake comes out clean.
