I never heard of any pickle recipe where you didn't use boiling liquid.

Beans have to be blanched before you freeze them to kill the enzynes that cause spoilage and an off taste. The same can be said of pickling. I don't think your pickles would last long before spoiling unless you use a hot liquid

Dilled beans are very good. I like the purple beans for them because they do turn a nice bright green compared to the green ones that become a washed out gray green.

I do a cold water dill pickle and have been using them for a good 35 years.I sent off for the recipe and we love them, but I've not ever tried it with anything but cucumbers. The amount of salt and vinegar keeps it safe.
