| I bought a seamed 6.5 pound eye roast I want to make it tommorrow with mashed poataoes and creamed spinache. Can someone share a T&T recipe to knock your socks off to company! I figured being that we have a huge storm coming in tommorrow this might be nice on a windy rainy day TIA |

| Since eye of round roast is a very lean cut of meat you will want to cook it to a medium rare,about 130, then take it from oven and tent loosely with foil and let rest for at least ten minutes. If cooked to medium or beyond it will be dry and chewy. |
