RECIPE: The best Blueberry cake

Its blueberry season here so this cake gets made alot now.

Blueberry Cake

3 beaten eggs
Cup melted butter or margarine
2 cups sugar
tsp Almond Extract
tsp vanilla
3 cups flour
4 1/2 tsp.Baking Powder
1/2 tsp Salt
3/4 Cup Milk
2 1/2 Cups Wild Blueberries

Method
Beat eggs; add melted butter, sugar and almond - vanilla flavoring; beat well.
Sift flour with baking powder and salt and add alternately with milk to make smooth batter.
Fold in Wild Blueberries. Pour into a well greased and floured tube cake pan.
(Wild Blueberries make a much better cake) Bake at 350 F for about 60 minutes.
Cool and ice with "Cream Cheese Frosting".

Cream Cheese Frosting

1 small pack of cream cheese
1/4 cup butter
2 1/2 cups of powdered sugar
1/2 tsp vanilla

blend well to make soft icing and cover the cake.
garnish with blueberries

Your cake sounds really wonderful. Could you tell me how many oz. is the "small pack" of cream cheese?

The small pack of cream cheese is 3 oz.

Thank you. I couldn't remember, and it's packaged differently here.

I want to note that frozen berries can be used in this cake. With folding in the berries dont be too hard on them as they will bleach the blue in the batter and does not look so good when cake is sliced. I usually buy the 8 oz package of cream cheese and split it in half for the frosting. I just freeze the rest until the next time.
