RECIPE: Prosciutto and Ricotta Hors D'oeuvres

Not sure where I got this from, but I have been waiting to try it.

1/3 C. ricotta - drained in fridge for 1 hour or over night.

2 tsp. 1/4" diced roasted red peppers

2 tsp lemon juice

2 tsp. fresh basil - chopped

1 tsp. minced fresh garlic

2 tsp. Parmesan cheese

12 slices Prosciutto

Mix drained ricotta with all above ingredients EXCEPT prosciutto.

Place 1.5-2 tsp cheese mixture on the short end of a piece pf prosciutto and roll up.

Cover with wax paper and chill.

Place on lettuce-lined tray, drizzle with olive oil.

Serve with baguette slices.
