RECIPE: Mousse or Parfait - room temp

Planning Christmas party for 18 ladies where the restaurant will let us bring the dessert. I purchased plastic cocktail glasses & we want to make something pretty and light to finish the dinner.

Problem is what can we make and refrigerate then transport and NOT have to keep refrigerated for a little more than one hour before it will be served. I think it would be unfair to ask the restaurant to refrigerate what we bring. Can anyone help? We are thinking lemon, lime or any light dessert that will look pretty in a glass perhaps with a little holiday garnish of some sort.
