RECIPE: red lentil soup

my favourite quick and easy winter soup! it's ready in less than no time.

3 tbsp olive oil
1 onion finely diced
2 carrots grated
1 cup red lentils
4 cups vegie stock
add 2 potatoes peeled and diced and 1 cup cubed eggplant if desired

heat the olive oil, onions, eggplant and curry powder over medium heat until onion softens. add the carrots, potatoes, washed lentils and stock. bring to the boil and the simmer for 15 minutes or until the lentils dissolve.

Never cooked red lentils by themselves...but I sure have included them in other bean soups.

Aha - you're from Australia :) That's why you are posting a winter soup in August when I think its still summer!

Thanks for the recipe, it sounds good to me - how much curry powder do you use - or do you just put it in 'to taste'?

I love lentils any way and just happen to have some red ones so will be trying this as soon as "soup weather" arrives here in Texas.
