RECIPE: Pureed Cauliflower

I may have posted this before, not sure. Its a great side dish and is even liked by those not particularly fond of cauliflower.

I like the smooth texture so I use a food processor to puree it.

Cauliflower Puree

1 Cauliflower head

3 T. Olive oil or butter

1/2 t. Salt

1/2 C. Grated Parmesan cheese

1/4 C. Chicken broth (may end up

using less)

Remove core and leaves from cauliflower.

Steam whole until tender (a knife should pierce it without resistance)

Add butter substitute, salt, parmesan cheese, and 2 tablespoons of chicken broth in a food processor.

Pulse until all pieces have been processed, and

then puree until smooth and creamy, about 2

minutes.

Add more chicken broth if mixture is not creamy.

Taste and adjust seasonings. Pulse a few times

to remix.
