RECIPE: hot chicken salad pie

I posted this on another site and thought some may like this recipe on GW. It is so easy to prepare and quite good. All that is needed is a delicious dinner roll, a crisp green salad and a nice chilled bottle of wine, and you are good to go!

2 cups cooked chicken breast, diced
1 & 1/4 cups celery, diced
1 green onion, chopped greens included
1/2 c. sharp cheese, shredded (I use a good white cheddar)
1/3 cup toasted pecans, chopped
1 cup Lays potato chips, crushed
1 cup good mayo like Hellmans or Best Foods
1 T. fresh lemon juice
Salt, Creole seasoning, fresh ground black pepper to taste
dash cayenne.
1 deep dish pie crust (store bought or bake your own) baked to pale, not quite done.

Combine chicken, celery, onion, cheese, pecans and potato chips together well.
Mix Mayo,lemon juice seasonings together well, then mix in with the chicken.
Sprinkle with paprika, and bake in cooked pie shell and bake for about 30-35 minutes.

You can use you imagination here with whatever seasoning you like.

Sounds like the good old Baked Chicken Salad casserole that we made years ago - and loved. We served it often for family dinners and Sunday lunch.
