| My friend has an apricot tree full of fruits that aren't that sweet or flavourful even when ripe. I made some jam, adding orange and cinnamon and it turned out great, but I'd like to make some salsa or chutney and can it. But I can only find 1 recipe-why? Does anyone have a recipe for salsa or chutney maybe with pineapple? Thanks! It seems a shame to let them all go to waste |

| This is way too late for this year but maybe for next year . . . . . . . . (I was thinking apricots could be subbed) FOR THE MANGO SALSA: (emerril lagasse) 1 1/2 cups (1/2-inch) diced mango Place all the ingredients in a non-reactive medium bowl and stir to blend. | Apricot Salsa Recipe from: dave from Yardley, PA 2/3 cup chopped fresh apricots, or 1 pint apricots; drained and chopped Combine; mix well. Chill until serving time. |
