LOOKING for: preserving/cooking mango

I'm sure there's more ways than salsa, ice cream and pie to use mango. What's your favorite?

    MANGO CABBAGE SLAW (serves 6)
    1 small head green cabbage, shredded
    2 ripe mangoes, peeled, pitted & chopped
    1/2 cup chopped green onions with tops
    1 cup plain yogurt
    3/4 cup mayonnaise
    4 jalapenos, seeded & minced
    2 TBL Dijon mustard
    3 TBL sugar
    Juice & zest of 1/2 lemon
    Salt & pepper to taste

    Toss the cabbage, mangoes & green onions in a bowl. Whisk the yogurt, mayo, jalapenos, mustard, sugar, lemon juice, lemon zest, salt & pepepr in a bowl. Add the mayo mixture to the cabbage mixture & toss to coat. Cover & chill 1-8 hours.~~Austin Entertains

    MANGO FETA DIP W/WALNUTS (about 3 1/2 cups)
    1 cup low-fat yogurt, drained
    1/2 cup walnuts
    1/2 cup cilantro leaves
    1 cup ripe mango, finely diced
    6 oz feta
    1 tsp lime zest
    1 TBL lemon juice

    Preheat oven to 350°. Toast the walnuts for about 5-6 minutes. Remove from oven & cool. Crush well. (You can also toast them in a dry skillet on the stove-top but watch they don't burn & stir frequently.)
    Place the yogurt well in a colander lined with cheesecloth or use a fine strainer. In a processor blend all the ingredients w/the yogurt except the walnuts. Transfer to a serving bowl & fold in the nuts.~~

    MANGO FRITTERS (serves 8)
    1/4 cup sugar
    1 1/4 cups flour
    1 1/4 tsp baking powder
    1/2 tsp salt
    1/2 tsp cinnamon
    1/2 tsp nutmeg
    Dash of allspice
    1 egg
    1 tsp vanilla
    1/4 cup water
    2 cups finely chopped mango
    1/2 tsp freshly grated ginger
    Vegetable oil for frying
    Granulated sugar for topping

    Sift the dry ingredients together. Whisk together the egg, vanilla & water & add to the dry ingredients. (You may need to add more water to the mixture & if so, add a TBL at a time.) Fold in the mango & ginger until well moistened. Drop by large spoonfuls into the hot fat, frying until golden. Drain on papaer towels & then dust w/sugar & serve at once.~~

    MANGO SPINACH SALAD W/GORGONZOLA & WALNUTS (serves 1)
    2 cups fresh baby spinach, well rinsed
    2 plum tomatoes, quartered
    Red onion rings
    1/3 cucumber, peeled & sliced
    2/3 cup fresh diced mango
    1/4 cup Gorgonzola, crumbled
    3 TBL lightly crushed walnuts
    Fresh cracked pepper

    Basil Vinaigrette:
    2 TBL olive oil
    1/4 cup red wine vinegar
    1 TBL water
    1/2 clove garlic, crushed
    1/2 tsp fresh lemon zest
    3 TBL fresh basil, finely chopped

    Arrange the spinach on a plate & then arrange the tomato, onion, cucumber & mango on top. To make the dressing, in a small cup whisk the dressing ingredients together until well-combined.~~Taste of the Caribbean

    Wow! what a collection! Thank you so much. The fritters reminded me of the time I spent in the Bahamas - EVERYthing got fried in coconut oil.
