Chicken Salad with Grapes and Walnuts

Amount Measure Ingredient -- Preparation Method

4 cups cooked chicken -- cubed
1 cup walnuts -- chopped and toasted
1 cup celery -- diced small
2 cups red seedless grapes
3/4 cup mayonnaise
3 tablespoons tarragon vinegar
2 tablespoons tarragon -- chopped
1/2 teaspoon salt
1/2 teaspoon black pepper

Toss together all ingredients in a large bowl until combined well.

EXOTIC LUNCHEON SALAD

In a bowl, mix together the following ingredients:
1 1/2 cup mayonnaise
1 1/2 tsp. lemon juice
1 tsp. curry powder
1 1/2 tbsp. soy sauce
Mix above well:

In another bowl, stir together:
4 cups cooked and cubed chicken or turkey
1 - 5 oz. can water chestnuts, sliced
1 lb. green grapes
1 cup celery, diced
1/3 cup slivered almonds
1 small can crushed pineapple, drained
1 cup mandarin oranges, drained

Mix all ingredients and dressing together. Chill several hours or overnight. Serves 8.

Here is another variation that is a favorite of mine, just add some nuts.

Summer Chicken Salad

Mix together:
1/2 cup mayonnaise
2 tablespoons chopped fresh basil
1 tablespoon fresh lemon juice
1 teaspoon fresh grated lemon zest
2 cups chopped chicken
1 cup seedless grape halves (red or green)
1/2 cup chopped red onion
