RECIPE: Cucumber & Honeydew Salad

This salad is so delicious and refreshing (great for summer meals):

Cucumber and Honeydew Salad

2 cups peeled, sliced & cubed cucumber
2 cups honeydew melon, sliced & cubed
2 T finely chopped red onion (soak in cold water first to get rid of the "bite" then drain well)
3 T red wine vinegar
1 T light olive oil
1/2 tsp salt
Black pepper to taste

Toss all ingredients together and serve or keep in refrigerator for up to 4 hours before serving.
