LOOKING for: Pina Colada Tossed Salad Dressing Recipe

I was at a catered function last night at my children's school. The theme was a tropical bbq... the salad was a Tossed Pina Colada salad... basically it was tossed greens with grilled pineapple slices and coconut on top, with a pina colada flavored dressing... that was very light... in texture and taste... to look at the salad on the tray it didn't look like it had dressing on it...

I've googled and checked out many sites today looking for anything that seems like it could be a close dressing match... but I'm not seeing anything that doesn't have either pureed pineapple or heavy cream and yogurt in it... based on what I saw and tasted, I'm not thinking any of what I found come close, although I do intend to try them and see.

Any suggestions???

Not sure if this is the type of dressing you are looking for, but I bet it wold be good over the salad you described..... Theother possibility is to use some Pina Colada concentrate (in the frozen juice concentrate section) and add it to a basic vinaigrette recipe.

Pineapple Salad Dressing

"Perk up an ordinary salad with this tangy mixture shared by Shawn Nelson of Evansville, Indiana. With sweetness from pineapple juice and a but of zip from cumin, her salad dressing is a refreshing change of pace."
1/2 cup unsweetened pineapple juice
1/4 cup white vinegar
1 teaspoon ground cumin 1 garlic clove, minced
mixed salad greens

1. In a jar with a tight-fitting lid, combine the pineapple juice, vinegar, cumin and garlic; shake well. Serve with salad greens. Refrigerate leftovers; shake or stir before serving.
