RECIPE: pea salad (wonderful for spring)

This is a special sald that is easy to do especially for company or even on a brunch table. Adjust your peas/ingredients to how much you will need.

1 large can of peas, well drained
1 medium onion, chopped fine
4 large hard boiled eggs, chopped
A good MAYO to taste
Creole seasoning or salt & fresh ground pepper (black or white)

In a bowl mix all the ingredients and season to taste. Best if chilled several hours before serving.
This can be served on a bed of lettuce, and often time I serve it on top of a PEAR half, sprinkled with a bit of paprika.

I make the same thing....but I put cheddAr cheese in mine.
Never had it til I married my Texan. Has become a favorite of my NY relatives too.

Also good with some chopped cashews added.

I add cubed cheddar cheese to that base and call it "Peas and Cheese" salad.

I make it except I use frozen peas and cheese,eggs, celery,onion,salad dressing also salt and pepper.Jessie
