RECIPE: generic Bisquick recipe

This is pretty funny. I found the recipe on the side of a box of generic Bisquick. It looked pretty easy, and I was in a hurry, so I decided to try it. LEMON DELIGHT POUND CAKE it was called. Well, it showed a picture of a yellow, glazed cake; then, toward the end of the directions, it called for a LOAF PAN. I was making it for a reception and didn't want that size for slices, so I put the batter in two mini-muffin pans [total of 30 muffins]. Two surprises: 1- They took forever to bake, even when I upped the oven temp to 375 [called for 325] and 2- They were a huge hit at the reception!*

*I finally realized they were so yummy [to me] b/c I'd used real sugar instead of replacement for the first time in a long time.

Oh, yes. One other thing. Didn't have o.j. and subbed froz. lemonade; also added about 1 tsp. grated lemon peel and sprinkled a little granulated sugar on top of the glaze. If anyone's interested, I'll try to find time to type and post.
