RECIPE: Tomato Tapas

Hey everyone!
I made these last Friday to go with drinks and they were a huge hit. Since outdoor entertaining weather has arrived for most of us, I thought I would share the recipe.



Tomato Tapas
Serves: 24 appetizer

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 large plum tomatoes, seeded and chopped
12 sun-dried tomato halves in oil, drained and chopped
1 cup (4 ounces) shredded Italian 6-cheese blend
1/3 cup crumbled Gorgonzola or blue cheese
1/4 cup minced sweet onion
1 tablespoon minced fresh basil
1 teaspoon minced fresh rosemary
1/4 teaspoon garlic pepper
24 baguette slices

1. Combine first 8 ingredients.

2. Arrange baguette slices on a baking sheet. Spoon tomato mixture evenly over slices.

3. Bake tapas at 350*F (175*C) for 7 to 8 minutes or until cheese melts.

Thanks Alexa, just happen to have all that stuff so think we may start dinner with these tonight. Actually with a salad it may become dinner!

Sounds wonderful, Alexa...but what is "Italian 6 cheese blend?" Does it come in a bag? I am guessing mozzerela, provolone, fontinella, Parmesan....and what else?

LindaC - the ones you mentioned plus asiago and parmesan. Yes, you can get 4, 5 or 6 cheese blend in a bag or you can just shred your own to taste.
