LOOKING for: Need help locating a recipe.....

Several years ago I was in a small restaurant in Baxter Springs KS, it was called the Route 66 I believe, and they served a side dish that was called "Hot Baked Potato Salad". I may be wrong about the name and I have googled and cant find anything like it. It was chunky potatoes, with a mustardy sauce and very cheesy. OMG.....it was sooooooo good. Ive tried to copycat it at home and it just doesnt turn out right. Anyone have any ideas, or does this sound familiar? Thanks,

Was it Cafe on the Route? According to the post below, they had a FRIED potato salad the poster described as mustardy.

Ohhhh Ginger that is it!!!! I kept looking up baked potato salad. I have emailed them and am hoping to hear back from them. That posters comments are right on too, Baxter is a sleepy little town....but the food I had that day was YUMMMMMMMMMM!!

I think I first got this recipe off the back of a bag of shredded cheese. Feel free to add or subtract according to your tastes. Other possibilites to add could be ranch dressing, sour cream, bleu cheese, green onion...

Ingredients
1 (28 ounce) package O'Brien potatoes
1 tablespoon olive oil
8 ounces cheddar cheese, shredded
1/2 cup mayonnaise
1 teaspoon mustard
1/3 cup bacon, cooked and crumbled
Directions
1Preheat oven to 375.
2Heat oil in skillet; cook potatoes until lightly browned.
3Combine with 1 1/2 cups of the cheese, mayo, mustard and bacon.
4Spread in 9x13, top with the remaining cheese.
5Bake 20-25 minutes.
6Serve hot.

I'll try it and let you know....I definitely know it wasnt packaged potatoes though. I think Ill just fry up a skillet of potatoes and then add the other stuff....they still havent contacted me yet!

It was just on Food Network. 2 parts mayo to 2 part mustard & seasoning salt. It WAS fried potatoes used, too.
