RECIPE: Armenian Orange Cake ??

This isn't quite like a cake but I don't know what else you'd call it. More cakey toward the outer edge but sort of pudding in the center. I love it cold without topping. You can also subst pumpkin pie spice for nutmeg.

** Armenian Orange Cake

2 c. br. sugar

2 c. sifted flour

1/2 tsp. each salt & allspice

2 tsp. grated orange peel

4 oz. cold butter

1 tsp. bk. soda

1 c. sour cream

1 egg, slightly beaten

1/2 c. chopped walnuts

Combine br. sugar, flour, salt, allspice & orange peel in bowl.

Cut in butter with pastry cutter or fork until mixture is crumbly.

Grease & flour 9" sq. pan. Place 1/2 the crumbly mixture in pan.

Stir bk. soda into sour cream; mix in egg & other 1/2 crumbly mixture.

Pour over crumbly mixture in pan. Sprinkle with nuts.

Bake in preheated 350 degree oven for 40-45 min.

Serve warm with topping if desired.

Topping:

1 c. heavy cream

2 Tbsp. pd. sugar

1 tsp. grated orange peel

2 Tbsp. Cointreau or Grand Marnier

Whip cream. Stir in remaining ingredients.

Let stansd 1 hour to allow flavors to blend.
