| Hi all --
I'm so excited, as I made up a muffin recipe (modifying a different carrot muffin recipe I had) and they turned out so well -- really nice texture and flavor, not too sweet, with good banana flavor! Banana Oat Walnut Muffins (makes 12) 3/4 cup buttermilk
Preheat oven to 375. Mix first six ingredients (buttermilk through sugar) together in a large bowl. Mix all other dry ingredients together in a small bowl, then add to the wet ingredients and mix until combined. Portion into muffin cups (I used muffin cup liners, otherwise grease the pan) so that cups are about 3/4 full... Bake 18-20 minutes, until browned on top and and a toothpick stuck in one comes out clean! Let me know how you like them! Emily |

| I made these yesterday and they were very good.......I had already added the nuts before I saw that word "toasted" so they probably would have been even better if I had done that but.........they were nicely moist and a good banana flavor. Thanks. RL` |

| fearlessem, I made your muffin recipe this morning, and are they ever good!! I didn't have any walnuts so I substituted some roasted almonds that I had in the freezer - that is the only change I made. Very delicious....! Thank you for sharing - I am definitely keeping that one. :) ~cj |

| I tried this recipe tonight, but I used only 1Tbsp oil and 1/4 cup sugar and also, I used 2% milk (did not have buttermilk) and it came out very well! Yum! |
