RECIPE: Substitution Question for banana bread

I have a wonderful recipe that my SIL uses, it's a very rich bread (I'll post it and then ask my question)

3/4 cup butter, softened
1 8oz package of cream cheese
2 cups sugar
2 large eggs
3 cups all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 cup mashed bananas (about 4 medium unpeeled)
1 cup chooped pecans, toasted
1/2 tsp vanilla extract

Beat butter and cream cheese on med. til creamy. Gradually add sugar, beating until light and fluffy. Add eggs 1 at a time, beating just til blended after each addition.

combine flour and next 3 ingredients gradually into butter mixture, beating on low speed just until blended. Stir in bananas, pecans and vanilla. Spoon batter into 2 greased and floured 2 x 4 inch loaf pans.

Bake at 350 for one hour or until wooden pick comes out clean and sides pull away from pan.

cool on racks 10 min. remove from pans, cool 30 minutes before slicing.

0K, MY QUESTION...WHAT WOULD IT BE LIKE TO SUBSTITUTE SOME OF THE BANANA FOR MANGO, SO IT WOULD BE BANANA MANGO BREAD?

I JUST HAPPEN TO HAVE 2 PERFECTLY RIPE MANGOS THAT I DONT WANT TO WASTE.

Go with 1/2 cup mango, smashed and the balance 1 cup banana.

I am sure it will be TREMENDOUS.

Sounds fabulous.....as does the recipe....
Butter AND cream cheese? Wow how could it be anything but good...
And mango and banana?...and pecans?
Can you tell I am hungry?

Bet that would make a great layer cake....with lemon cream cheese frosting!!

It's in the oven...I actually did ONE more substitution...I used whole wheat flour instead of regular flour...(a balance in health to offset the cream cheese, butter and sugar ;)

I also ended up using one whole mango and 3 bananas

lemon cream cheese frosting...YUMMMY

I have a bundt cake recipe that my nephew made recently that was to die for....I'll have to post that one later too. It was a Paula ? (the southern chef lady...recipe) He also made some substitutions and it was yummmmy

Another question (using this same recipe). I now have lots of zucchini from my garden and wanted to make a super rich yummy bread from it...so of course I thought of this super rich yummy banana bread recipe that I know is very very good (moist).

Would zucchini fare well as the main ingredient to replace the banana???

I'm thinking of giving it a whirl, unless someone can talk me into using a different recipe?

Did I read this recipe wrong I never heard of unpeeled banana in a banana bread.

ha ha, that would be different, no the (xxx) was to show what an equivalent of 1 1/2 mashed would be...4 med. banana's clearly the unpeeled descriptive was TMI ;)
