Can you share your favorite that makes a light & fluffy pancake using buttermilk...TIA

On the VERY rare occasions that I make pancakes, I use Marilyn's recipe.

These are thick because they puff when cooked but they are very, very light pancakes.

Buttermilk Pancakes

1 cup flour
1 1/4 teaspoon baking powder
1 tablespoon sugar
1/2 teaspoon baking soda .
pinch of salt
1 egg; beaten
1 tablespoon vegetable oil
1 cup buttermilk

Sift flour, baking powder, sugar, baking soda and salt together. Combine remaining ingredients and whisk into dry ingredients until mixture is smooth. Pour by large spoonfuls onto non-stick griddle that has been pre-heated to 350° and cook until top is bubbly. Carefully turn over and continue cooking until done. These are very light pancakes. Makes 5 (5 1/2-inch) pancakes.

I might make these tomorrow morning! I've been thinking about pancakes. Might use self rising flour instead and just add the baking soda. Still have some maple syrup on hand. I just can't go back to old Log Cabin anymore.

results: buttermilk pancakes

I made the recipe posted by woodie this morning and can report that the pancakes are indeed very light and delicious! Yes, they puffed up quite high and looked thick, but they are very light. I was able to find whole milk buttermilk for a change which is very thick. For so long we only had non-fat buttermilk in all the stores, but I think the natives revolted and demanded their old-fashioned buttermilk.

Could I mix up these dry ingredients ahead of time and how long would they last premixed.

These are great, much better than the recipe I've been using out of my Betty Crocker cookbook. They are really light & fluffy, and even DH enjoyed a plate with maple syrup, he usually doesn't like pancakes that much.
