Thought I'd share what's for tonight's dinner - the last time I made this particular entree was for my DH the first time I cooked for him over 14 years ago. I'm curious to see if he remembers...

Chicken Breasts in Mustard Sauce

2 tablespoons butter or margarine

4 skinless boneless chicken breast -- 1 pound

1/4 cup finely chopped onion

2 tablespoons apple brandy or apple juice

1 cup heavy whipping cream

2 tablespoons chopped fresh parsley

2 tablespoons dijon mustard

1/4 cup finely chopped walnuts

Heat margarine in 10-inch skillet over medium heat. Add chicken breasts. Cook 12 to 14 minutes, turning after 6 minutes, until juices run clear. Remove chicken and reserve.

Add onion and brandy to skillet. Heat to boiling; reduce heat. Stir in whipping cream, parsley and mustard. Cook and stir over medium heat 5 minutes. Add chicken and walnuts. Heat until hot.
