RECIPE: Couscous Salad

A friend gave me this recipe and I really love it. There are no measurements of ingredients...add as little or as much as you think you'd like. It's better served at room temp.

1 Box of Olive Oil/Pine Nuts Couscous, cooked and cooled to room temp.
Chopped green, yellow and red peppers
Chopped celery
Chopped green onions
Chopped tomatoes (I use cherry or grape tomatoes)
Craisins
Chopped dried apricots
Toasted pine nuts
Honey roasted almonds
Black pepper

Toss the ingredients with the cooked couscous with just a little olive oil and serve on a bed of mixed greens. This is a very refreshing and colorful salad.

I will have to give this a try.....I'm beginning to like dried fruit in my salads. Thanks.

Try adding a dash of fresh lemon juice.
