LOOKING for: Kettle Chips

I would love to know how to make the really crunchy Kettle Chips that Lay's puts out. Does anyone know how to do these?

    Nonnie, I make homemade

    to serve with wings. I make them the same way I make homemade regular fries using russet potatoes, sliced very thin and deep fried quickly in hot oil. I just use a cast iron dutch oven rather than an electric deep fryer.

    Using a mandolin slicer is key to getting uniform potato slices. If you use a two-stage frying process, blanching first then finishing the chips until golden you'll get a better chip. Here's a step-by-step guide on how to make kettle chips
