RECIPE: looking for: potato boats recipe

What are the healthy ingredients you can incorporate in making potato boats? Also, I don't want to deep fry the potatos because it becomes oily and unhealthy. I only have my oven at home but I don't know how to use it for the potato. I don't know how long should the potatoes be inside the oven and how to monitor its appearance before it's ready to be taken out.

Please help!

Here is a link which includes baking time for the uncooked potato. You can also google twice baked potatoes for more recipes.

Yogurt is often substitued for sour cream. And there are low-fat cheeses or you can omit it. Onion is the usual vegetable used but if you like broccoli or cauliflower you could parboil it and gently mix into the potato mixture. Ham could be used. Whatever suits your tastebuds.

(The filled potato halves are only put back in the oven to reheat - taste the center of one to see if they are hot enough)
