RECIPE: Nutmeg-Glazed Rutabaga

Here's another from my recent recipe clipping marathon:

Nutmeg-Glazed Rutabaga

3 tbls unsalted butter
2 lbs rutabaga, peeled and cut into 1/2-inch cubes
2 cups chiken stock or canned broth
3 tbls sugar
Freshly grated nutmeg

In a large skillet, melt the butter. Add the rutabaga, stock, sugar and three gratings (a healthy pinch) of nutmeg and bring to a boil over high heat. Reduce the heat, cover, and simmer until tender, about 25 minutes.

Uncover and boil until the liquid reduces to a syrup and coats the rutabega, about 15 minutes. Dust with nutmeg before serving.

My notes: You got to wonder about the recommended times. My rutabaga was tender+ in just 15 minutes. I removed it, cuz I was concerned that another 15 minutes would turn it to mush. Boiled down the liquid until it was syrupy, then added the diced rutabaga back to the pan and stirred to coat. Worked out fine, and tasted great.

Well, thank you, and just on time. I have a couple of rutabaga in the garage that I pulled about a week ago and they are just begging to be cooked.

I usually just boil & mash, but I think I'm going to give this one a try. Maybe tonight.

Would you believe this was the first time we ever tried rutabaga? Don't know why we haven't eaten it in the past. But you can bet it won't be the last time.

Annie, do you grow them like turnips?

Yes, GL, I grow them just like turnips. Some get really big and it doesn't seem to make a difference in quality. Usually I pull them about the time I pick the butternut squash, but this year there were some that were left in the garden, we'd had all we wanted. I went out last week and the tops were still green, so I pulled them. Stepmom canned 6 pints (although they do get "strong" when canned) and I snagged two to take home for dinner.

And now, just like it was meant to be, a new recipe for rutabaga.

I'm glad you tried it, though, I really like it better than turnips I think.

Hi All,
New to this forum. I tried growing rutabagas two years ago and they didn't germinate. I grow turnips like weeds here in NC on the VA border. I was never sure if the seed I got was bad so I am trying it again this year. Any tips from anyone? I plan on direct sowing around July 15th for a FAll harvest.
