RECIPE: sub for Kefalotiri Cheese

| My Pastitsio recipe calls for a good bit of Kefalotiri cheese. No luck finding any here (or near). Can anyone suggest a good substitute? |

I make my Pastitsio with grated Kraft parmesan cheese and it is just fine my kids love it.

| Kefalotiri is hard goat cheese from Greece. The closest to it is Pecorino Romano which is a Romano but one made from sheep's milk as opposed to cow's milk. Kefalotori is a quality cheese so with distinctive flavour. I would try for Pecorino Romano (Loctelli is an excellent brand) first, if you can't find it use a good Parmesan or a cow's milk Romano. |

| I make Pastitsio often and I use Locatelli and its just fine....as a matter of fact I sent a tray to Johns construstion site 2 weeks ago and his Greek friend loved it and the following week his Grandma sent me some of hers in a tupperware bowl! |
