RECIPE: Wild Thing Soup

This is a wonderful soup the is easy to make and easy on the waist line. Maybe this will help with some New Years Resolutions.

Wild Thing Soup

2 Chicken Breasts, grilled and cut into chunks

3 T instant chicken bouillon

8 oz. fresh mushrooms, sliced

2 cups carrots diced

1 Box Uncle Ben's Long Grain & Wild Rice

1 bunch green onions

2 T margarine

2 cups celery diced

Pepper to taste

8 servings

Bring about 8 cups of water to a boil. Add bouillon, carrots and celery. Cook vegetables until tender, about 15 minutes. Add rice (Do not use the seasoning packet n the Uncle Ben's Box) and simmer about 20 minutes. Sauté mushrooms and onions in margarine. Add to broth. Cut chicken to bite-sized pieces and add to the broth. Heat back to a simmer and serve.

My notes: I add 2 Tbls chicken base to water and cook the chicken breast to make a rich stock
